Russet Potatoes are the most common table potatoes. They are usually a longer type of potato, with a "russeted" skin. The category was established with the Russet Burbank variety, but now includes many newer cultivars (another term for variety), such as Goldrush Russet, Russet Norkotah, and HiLite Russet. Russet potatoes are generally good for baking, as well as other preparations. Available in 3, 5, 10, 15 and 20 pound sizes. |

Round White's are another very common category of table potatoes. The tubers usually have a much rounder shape then russet potatoes. The skin is normally smooth, altho some cultivars exhibit a slight russeting of the surface. Common varieties include Superior, Kennebec, Valor and Saxon. Round White potatoes are generally good for boiling and mashing. Available in 5 and 10 pound sizes. |

Red skinned potatoes are a variant of round white type potatoes. They usually exhibit the same round shape, but of course have a red skin. Normally the flesh inside the potato is white. Common varieties include Norland, Sangre, NorDonna and Chieftian. Red skinned potatoes tend to be slightly "wetter" when cooked, and are commonly enjoyed boiled or mashed. Cooks often serve them in the skin, to create eye appeal for a meal. Available in 5 and 10 pound sizes. |

Yellow fleshed potatoes are much more common in the rest of the world, then in North America. This category of potato became common here with the introduction of the Yukon Gold variety. Yellow fleshed potatoes are mostly round, altho there are some long type varieties. The flesh inside of the potato has a distinctive yellow hue, almost as if the potatoes were already buttered. The Yukon Gold variety is excellent boiled, baked, or mashed. Your author is of the opinion that no other potato makes as good a potato scallop! Other yellow fleshed varieties include Divina, Van Gough, and Sierra. Available in 5 and 10 pound sizes. |

Boxes |
Count Boxes are a specifically sized box of potatoes. They are most commonly used by restaurants and other institutions. Normally supplied in 50 lb. containers, the most common types are 100 count, 90 count, 80 count, 70 count and 10 oz. minimum. In the count box you will usually find the specified number of tubers (plus or minus) all with the same approximate weight. As an example, a restaurant buying a 100 count box would expect to be able to serve 100 customers each an 8 ounce potato. This gives both cost and serving control. Count boxes usually sell at a higher price per pound then many of the bagged retail packs. Count boxes are most commonly filled with Russet type potatoes. Available in 20 and 50 pound sizes. |

Canada No. 2 packs are hand picked potatoes which have a small defect or blemish unsuitable for the other retail packs, but which are still good value. The Number 2's are often used by restaurants or for fresh cut french fries. We pack all types of potatoes in these packs, and color code the bags to identify the different potato types, as well as to designate larger run russet packs. Available in 50 pound sizes. |
